M1: two spicy tuna cakes with fresh lemon juice (YUM), a bowl of leftover Persian soup with onion-raisin relish & parsley-pistachio pesto, collagen coffee.
M2: lunch salad (diced smoked chicken, mixed greens, carrots, yellow bell pepper, Tessamae's avocado ranch dressing), the last serving of the beef stew, apple, toasted butternut squash seeds (hmmm, they really do taste like popcorn!).
M3: Mama's spaghetti sauce over spaghetti squash.

Spicy Tuna Cakes

Date: 2018-02-24 02:45 pm (UTC)• 2 lb. sweet potatoes
• 1 bunch green onions
• 2 Tbsp. coconut oil
• 4 rashers (slices) bacon
• 1 bunch of spinach
• 12-14 eggs (depending on size of eggs)
• ¾ tsp. salt
• 1 tsp. nutmeg, or more to taste
Directions:
1. Preheat oven to 400° F.
2. Wash, peel, and cut sweet potatoes into bite-sized cubes.
3. Toss sweet potatoes in melted coconut oil and ½ tsp. salt. Spread cubes in a single layer on a cookie sheet and bake for 20 minutes or until soft.
4. Cook bacon until crunchy. Set aside on paper towels, saving some of the bacon grease. Chop bacon very finely.
5. Wash green onions and chop very finely. Wash, dry, de-stem, and finely chop the spinach. Sauté both the onions and spinach in the bacon grease until soft, then drain excess bacon grease.
6. Lower oven heat to 350°F. Lightly grease a baking pan. Place half the sweet potatoes at the bottom of the pan, then a layer of half the onions/spinach, then a layer of half the bacon. Repeat these three layers.
7. Whip the eggs with the nutmeg and remaining salt, then pour the eggs into the pan, covering the other ingredients.
8. Bake until golden, approximately 40 minutes.
